One important thing: this pasta is best eaten right away.

The sauce is fairly light and the pasta absorbs it quickly, which is part of what makes it so comforting. But if it sits too long, the shells will soak up most of the liquid and the dish becomes much thicker.

So once everything is tossed together, bring it straight to the table while it’s still glossy and saucy.

Variations and Substitutions

One of the reasons I keep coming back to this pasta is that it’s flexible. You can easily adjust it based on what you have in the fridge.

Use different ground meat.
While I usually make this version with ground beef, ground veal or a mix of beef and pork also works beautifully. Even ground turkey can work if you want something a bit lighter.

Try another pasta shape.
Shell pasta works beautifully in this recipe because the curved shape catches the sauce and small pieces of beef in every bite. Other short pasta shapes like rigatoni, fusilli, or orecchiette also work well if that’s what you have on hand.

Skip the wine if needed.
If you prefer not to cook with wine, simply replace it with a little extra chicken stock. The sauce will still be rich and flavorful.

This recipe comes together in one pan while the pasta cooks, which makes it perfect for an easy but satisfying dinner. You start by sautéing onion and garlic in olive oil until soft and fragrant, then add the ground beef and cook it until nicely browned.

A splash of white wine is added to deglaze the pan and concentrate the flavors before chicken stock, thyme, and capers are stirred in to create a light, savory sauce.

While the sauce simmers, the shell pasta cooks in salted boiling water until al dente. Finally, the pasta is tossed directly in the skillet with the sauce, along with grated Parmigiano-Reggiano, fresh parsley, and a bit of butter.

Ingredients
  

  • 2 tbsp extra-virgin olive oil
  • 1 medium onion finely chopped
  • 1 garlic clove minced
  • 1 pounds ground beef
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1/2 cup dry white wine
  • 1 1/2 cups chicken stock
  • 1 tsp  chopped fresh thyme
  • 2 tbsp small capers rinsed
  • 3/4 pound shell pasta
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • 2 tbsp chopped flat-leaf parsley
  • 2 tbsp unsalted butter

Instructions
 

  • Heat the olive oil in a large, deep skillet over medium-high heat. Add the onion and garlic and cook, stirring often, until softened and fragrant, about 5 minutes.
  • Add the ground beef, season with salt and pepper, and cook over high heat, breaking it up with a spoon, until browned and no longer pink. Continue cooking until most of the released liquid evaporates, about 7–8 minutes.
    Pour in the white wine and let it simmer until almost completely reduced, about 4–5 minutes.
  • Add the chicken stock, thyme, and capers. Reduce the heat to medium and let the sauce simmer until slightly reduced and flavorful, about 10 minutes.
  • Meanwhile, cook the shell pasta in a large pot of salted boiling water until al dente. Drain well.
    Add the cooked pasta to the skillet along with the grated Parmigiano-Reggiano, parsley, and butter. Toss over medium heat until the butter melts and the sauce lightly coats the pasta, about 1–2 minutes. Serve warm.
